A blend of Chichibu aged in bourbon casks, quarter casks (chibidaru) and five- to seven-year-old hogsheads made from different barley varieties, some of which have been malted by hand, Paris Edition 2023 shines in its harmony. Intensely fruity, delicately medicinal and remarkably fresh, its aromatic and taste palette dances to the rhythm of an extremely refined peat whose influence reaches its peak at the very beginning of the palate.

With their typically large skylights, chiselled ironwork and elaborate facades, department stores bear witness to the innovations of the French world of commerce and architecture in the second half of the 19th century. It is in reference to this Parisian history that Chichibu dedicates its Paris Edition 2023, an exceptional assemblage signed by Ichiro Akuto. Five versions of the labels have been designed to represent each of the facades of these buildings, emblematic of the capital’s commercial and architectural history.
Tasting note
Nose
Well-fruited nose of apple, pear, stewed grapes and candied cherry. The almond is also present, but caramelized. The profile is fine and the woodiness delicate. The occasional whiff of alcohol is still noticeable.
Palate
The fruitiness on the nose is more intense than on the palate. The apples and pears are rather macerated in brandy, but they give way to the woodiness, which brings a distinct bitterness to the finish. At times, almonds creep into the tasting, accompanied by a touch of sweetness as on the nose.
Overall
Long, accomplished. Finely chocolaty, it is also rancid (cherry brandy, apricot liqueur). It evokes the harvesters’ baskets filled with golden bunches of the folle blanche grape variety. Retro olfaction oscillates between prune, vanilla and dark chocolate. The empty glass is roasted (tobacco, coffee).
