1973 The Sablé estate

Located in Lagrange, the Sablé estate produced only three vintages: 1973, 1974 and 1976. All were distilled only from the grape variety Baco. Profile: medicinal (tiger balm). Figs, ripe apple, quince jelly, praline and cocoa bean. Heady flowers (thrush, marigold), leather, spices (star anise).
Colour: old gold with orange gleams.
Nose: bright and nervous. Medicinal start (Tiger balm) relegates momentarily others perfumes. Then, figs, ripe apple, quince jelly, praline and cocoa bean bring lot of complexity. Heady flowers (thrush, marigold), leather, spices (star anise) bring lot of nobility to the aromatic palate.
Palate: ample, haughty. It amazes by its note extremely fruity (grape, peach, apricot), so different from the nose. It spreads on a soft carpet of tender herbs and coriander. Rose, lavender honey and vanilla pod intensify the very pleasant sensation of freshness.
Overall: long, soft. It keeps long the fruity and floral intensity of the palate before to develop delicacy on precious wood (oak), caramel and bourbon vanilla. The retro-nasal olfaction stays very fruity and lightly spicy (nutmeg) during a long time. The empty glass leaves some space to licorice and fresh ginger.
1974 The Sablé estate
The overall of this vintage from the Sablé estate, produced entirely from the Baco grape, displays a quite remarkable maturity and depth. It carries you away on a light breeze that suggests the arrival of chilly winter weather with evenings by the fireside sipping a great eau-de-vie. The powerful character of the terroir comes through with notes of ceps and truffles, while its more elegant side offers heady floral (roses and peonies).
Profile : empyreumatic (cedar, lime blossom), floral (lilies, peonies, roses) and spicy (pink peppercorns, cloves). Fruity (apricots, passion fruit, persimmons) and rich (crème brûlée, rum baba).
Colour: orangey copper.

Palate: full-bodied, rounded. Amply fills the palate, offering a wide range of fresh fruit (apples, pears, peaches, plums). The mid-palate has lots of personality, and radically changes direction with notes of cucumber and zucchini , licorice sticks and ginger root mingling with aromatic plants (rosemary, savory) and honeyed notes (lime blossom).
Overall: long, soft, particularly evolved. The fruit becomes candied and the roses slightly wilted. Autumn has arrived (ceps, truffles). Gradually notes of vanilla and coconut bring freshness. The retro-olfaction is generous and fruity (apricots and mangoes) while the empty glass has a fragrance of saffron.

Located in Lagrange, the Sablé estate produced only three vintages from the Baco grape: 1973, 1974 and 1976. True model of softness, it presents chocolate note with a light peppery sensation which leaves some space to a good length on the palate and a persistent fat.
Style : Soft, flexible.
Nose: Chocolate, pepper.
Palate: Long. Fat. Cocoa.
Overall: Balanced. fine.
